Not likely, UFC doesn’t co promote and they don’t want to have all of the belts defended on one night because then future events would suffer from lack of Championships being defended. They actually wanted to do this on UFC 100 but found it better not to. Many champs would have to be healthy and not be injured to pull that off, and I think you know that having all of the champs be injury free to defend their belts all at once is a very very hard task. I know what you mean though.
